White-tailed Deer (Odocoileus virginianus). A new set of stock photos by Ernie Hunter The White-tailed Deer (Odocoileus virginianus) is one of North Americas most hunted game animals. Does come into heat or "Rut" around November and give birth in May or June, usually to twins. Bucks grow antlers through the summer and shed them in winter. Deer are herbivores, eating leaves, nuts, twigs, grass and some fungi. They have four stomach compartments, like cows, allowing them to chew cud and digest their food easier.
